BABY RATATOUILLE

This recipe differs from regular ratatouille in that there is no fussing and no sautéing each vegetable separately. Who has time? Just chop everything and throw it in the pot. Serve over rice. It tastes just as good and the whole family can enjoy it. This is fine for babies as soon as your pediatrician approves a solid food diet.

Ingredients:

1/3 cup olive oil

2 medium eggplants

1 medium zucchini

1 summer squash

1 large onion

2 handfuls mushrooms, any kind

1 large green pepper

1 1/2 pounds tomatoes, or 2 cups canned-crushed

1 cup water (or more by eye)

Season to taste, less for babies, more for you.

Alternate sides: fresh rice, Italian bread

 

You can adjust the quantities according to your preferences. Chop vegetables small and put them in a covered pan along with olive oil, tomatoes and water. Simmer one hour, or until soft. Season judiciously.
